    We start June with an ideal recipe for summer.  I bring you another one of those dishes that is part of the childhood of most Spaniards.  A simple recipe, fresh and with surprising flavours.

    Almond Soup with Garlic and Grapes, “Ajo Blanco con Uvas”

    Very popular cold soup in the south of Spain. It is considered the firstborn of the Andalusian gazpacho since it is based on bread, oil, and garlic. Almonds, salt, and vinegar are usually added, in addition to other ingredients depending on the region.

    One of the most refreshing gazpacho, a classic Spanish recipe ideal for this summer, which I have given my personal touch.

    Fish Pudding, "Pastel de Cabracho"

    This preparation is typical of northern Spain. I discovered it in Gijón (Asturias), where we can enjoy this sea dish to share with a nice glass of cider in most of its bars and cider houses.

    The idea of the dish is to respect the tuna as much as possible, so I decided to put a mild dressing and thus enjoy the unique flavor of tuna.

    A delicious and easy recipe to prepare. One of those summer tapas that you will find in many Spanish restaurants and bars.
